Zegna's Opening Act
New York, 04.13.04
On Tuesday, April 13th Ermenegildo Zegna celebrated the opening
of its New York flagship at 663 Fifth Avenue. The store is the first
in America to feature Agnona, the women's line. For the opening,
three generations of Zegnas greeted friends, clients and guests
as video cameras fed celebrity arrivals and party scene footage
onto screens throughout the store. Despite the rain, dozens of fans
lined the velvet rope outside to see the face of Zegna, Adrien Brody.
Fine Italian foods catering/event company Acquolina took care of
all the edible needs. The drink of the night: the "Zegna,"
a mix of light rum, passion fruit and passion fruit seeds. Peach
Bellinis were also popular. "The Zegnas were adamant about
having Italian food served," said Acquolina co-owner Adam Sikora.
Highlights included the bigne - filled savory puffs with fondue
and black truffle - and the saffron mini-risotto cake with asparagus
sauce.
For dessert, zabaione was served in espresso cups.
A very discreet after-party was held at a private residence, where
an early birthday celebration was planned for Adrien's 31st birthday.
The party was Moroccan themed and Acquolina prepared a seven-layer
birthday cake for two hundred guests.

The German design house, Escada, hosted an invitation-only luncheon
featuring the 2004 Spring/Summer Ready to Wear Collection Thursday
at the Indian Creek Home of prominent Miami socialite, Gillian Dinnerstein.
Guests enjoyed a sit down luncheon by caterer Acquolina from New
York and informal modeling of the collection. Escada employees including
the Bal Harbour Director, Lynn Neldeberg, were on hand to take order
for the Spring/Summer Collection.
Ferragamo, Store Launch
New York, Friday 09.12.03
Not even master magician David Copperfield could conjure his way
through the throngs of people waiting to get into the two-story
Salvatore Ferragamo flagship on Fifth Avenue for the store's launch
at the beginning of Fashion Week. He had to wait in a line that
wrapped around the block like everyone else, even those carrying
one of the event's sleek, custom-made-in-Italy invites.
Models served caterer Acquolina's Italian-inspired nibbles such
a prosciutto roll with foie-gras and fig chutney on black-and-white
trays. Dessert followed in the form of mini Italian gelato ice cream
cones and warm chocolate cake. Fans crowded the DJ booth and danced
on the lower level of the two-story store.
Bulgari
Sparkles and Shines at Paris Studios
Florida, Friday 02.20.04
To celebrate Bulgari's history of creative design, event planner
Selmin Arat converted Paris Studios into a one-night, four-room
Bulgari Gallery. New York-based Acquolina served up an assortment
of Italian appetizers and fruit-inspired drinks. Although delicious,
it was the presentation of the hors d'oeuvres themselves that satisfied
more than the guests' appetites.
Yolanda Garretti of Acquolina explained, "The food was served
on a wicker plate adorned with textured stones specifically chosen
to complement each appetizer." Sesame tuna tartare on cucumber,
for instance, came atop ocean blue stones with a cymbidium; cured
beef rolls with cheese and pistachios stood on larger, gray stones.
Champagne flowed freely, as did Bellinis.
Named after Nicola Bulgari's well-known adoration of Buick cars,
the "Buick" - a rum and fresh passion fruit cocktail -
was the big hit of the evening.

Based on the fundamentals of Italian cooking, the chefs of Acquolina have created menus for the likes of Giorgio Armani, including luscious canapés that look like tiny works of art. To complete the setting, Acquolina provides lovely décor and elegant table arrangements to complement the food.

Acquolina's team of chefs has fed Massimo Ferragamo, Giorgio Armani, and Princess Alexandra of Greece. Expect delectable hors d'oeuvre like quail-egg-and-paprika canapés and Parmesan tulips with prosciutto mousse; entrées range from spinach-and-ricotta gnocchi to filet mignon with aged balsamic vinegar. Cocktail hours start from $20, seated dinners from $75.

When Young was done, the guests were released into the Morgan Library's food-stuffed galleries to pursue humoral dietary theory: among the towering trays and sumptuous platters were herb-stuffed quail eggs with cheese and raisins, artichoke torte, mozzarella-and-chard torte, and Taleggio toasts with cinnamon. Looking on anxiously were two of the caterers-Marika Seguso, from Milan, and Adam Sikora, from Mill Basin, Brooklyn-who had never re-created a historical meal before. "We found it very challenging but very exciting," Sikora said. Seguso said she recognized Renaissance cooking techniques in contemporary regional Italian cuisine; those techniques may have been less familiar to Sikora, given that the contemporary cuisine of his region, as he noted, is deli.

Co-partners in the catering firm ACQUOLINA created the evening's mouthwatering Italian repast, which was presented at several food stations. The burgeoning catering company is famed already for both its creative presentation and deliciousness.

Downstairs on the 19th Floor, Baroness Mariuccia Zerilli-Marimò, the founder of the Casa Italiana Zerilli-Marimò, the center for Italian studies at New York University, discussed the lobster and Champagne risotto with the caterers of Acquolina before dashing off to Mass at the United Nations, where she is a member of the Permanent Observer Mission of the Holy See. She had never met most of the people who had booked space at her three tables. "I couldn't ask my friends to pay $1,000," Baroness Zerilli-Marimò said. "So I'm meeting very nice people who are surely nice because they help the park.

When Marika Seguso teamed up with her mother-in-law to create the menu here, it wasn't an unusual task. Almost two years ago, she and partners Adam Sikora and Yolanda Garretti founded Acquolina (212-994-9300), a catering business in New York City with such fashionable clients as Giorgio Armani and Dolce & Gabbana. Her recipes won over the F&W staff-unanimously.
